Directions | Mash @ 148 degrees F with 7.5 gallons of water. Batch sparge with 7.5 gallons of 180 degree F water. Boil for 7 hours (added 2 gallons after 2.5 hours, then 1 gallon after 6 hours - making sure to hit final volume). | |||||||||||||||||||||||||||||||||||
Fermentation notes | Ferment @ 62.5 F for four days, then ramp up to 68 degrees F (at the rate of one degree per 12 hours). Bottle after six weeks. | |||||||||||||||||||||||||||||||||||
Tasting notes | So far, so good. Amazingly complex, with a great hop punch. Lots of caramel and fruit notes, toffee, figs, thick, syrupy mouth feel without being cloyingly sweet. Strong hops nose, needs more of an initial bittering charge next go round to really cut through the body, 70IBUs of warrior for bittering would make this even better. | |||||||||||||||||||||||||||||||||||
