DirectionsVery balanced water profile, somewhat light. 75 Calcium, 50 Chloride, 50 Sulfate. Quarter tablet Campden in strike water, quarter tablet in sparge water.

Mash at 150 for 75 minutes

Double sparge with slightly acidified second sparge water

Boil for 90 minutes

Whirfloc Tablet and Yeast Nutrient added with 5 minutes left in boil


Fermentation
notes
7 days at 45F

Ramp to D-rest 3 days at 70F

Ramp down to 32 F

Lager for 90 days. (Try after 30 day lager. But this yeast takes quite long to lager out the sulfur character).

Tasting
notes
This yeast was still very sulfury after 30 day lager period. Improved, but still somewhat sulfury at 60 days. At 90 days, it peaked, the hops began to drop out, and it placed 2nd in NHC first round and advanced to finals.
