Directions | Mash In with 11.25 quarts of water at 159F. I use regular tap water and do nothing to it. After the grains are put in, the temp should be around 148F. Mash for 75 minutes, stirring every 20 to 30 minutes.
Drain out the first runnings and put them back in. I batch sparge twice with 2 gallons each (4 gallons total) with 168F water. I use almost all of the runnings, getting usually around 5.5 - 6 gallons.
Boil for 60 minutes -Perle goes in at first boil -Tettnang goes in with 15 min left along with the Irish Moss -Final Tettnang goes in with 5 min left
Once boil is done, cool to around 75F or so. Strain through a mesh colander into my carboy and add the yeast.

Fermentation notes | I ferment in my basement at a constant 66 degrees for around 7 days.
After the week, it goes into my fridge for 3 weeks.
After the three weeks, its into the keg with gelatin and CO2 is put on it. |

Tasting notes | Comes out a beautiful light golden color and usually crystal clear. Delicious beer, my house beer that is always on tap. I've brewed this beer over 15 times and is always great.
A little bitter but not much at all. Just clean and crisp. Highly recommend brewing this if you like lighter beers. Don't hesitate, make this one and let me know how it turns out.
