DirectionsSingle infusion with batch sparge.  Heat 3 gallons strike water to 180, pour into mash tun and let tun absorb some heat.  Mash @ 151F for 60 minutes.  Drain tun, batch sparge with water at 200F for 20 minutes.  Drain tun.  60 minute boil with 1oz Cluster @ 60.  Cool to 65, pitch yeast (no starter).  

Fermentation

Fermented in 6 gallon PET carboy at 68F for two weeks.

Tasting
notes
Finished dry, but still has plenty of malt backbone.  Slightly bitter.  Honey aroma.  

CreditsBased on cream ale recipe from Northern Brewer, but with addition of 6 Row and some modification of malt usage.
