You should be OK with a full pack, rehydrated. While you won't have O2 in the beer, there are two pieces of good news: (1) dry yeast are primed to go with large stores of O2, nutrients and sugar (trehalose), and (2) yeast can reproduce and produce energy anaerobically (I forget the name of the metabolic pathway that allows them to do so) if they have an adequate supply of sugar and certain proteins and lipids, so once they are done with using up their reserves from the yeast lab, your yeast will start scavenging the beer for building blocks. That ability to survive and thrive completely anaerobically is one of the very rare abilities of yeast.

Ok, I pitched the new pack of Notty on Sunday.  That's 3 days.  Currently = 1.025.  So, that's 5 points in 3 days?  Should I add the dry hop and give it another 6-7 days and then call it good?
