OK, my Google Fu failed me here.

I was recently at a Tuscaloosa Brewery that inspired me to attempt a Baltic Porter. Their Balty was smooth and delicious at 9% the first time I had it. This last time, I couldn't finish the glass because there was a bubble gum flavor to it that was not appealing. Anybody know what causes that?

US-05 or equivalent? I hate that yeast because of the bubblegum.

It was the brewery's yeast. Don't know. I'll ask next time I'm there.

Yes, it was THEIR beer.

US-05? Never had the WLP001 give me that.

I haven't had Chico give me that either, but I typically ferment it around 64F.

Yeah, because of all the hops you throw in ;)

I notice it very often in Porters and Blondes at our brew guild, a faint sweet pink raspberry bubblegum smell, not the big gum some Belgian yeasts produce. Yes, it can very well be a fermentation temperature thing, as if the yeast profile flips at a certain threshold instead of gradually changing.

Yeah, but this was a 9.2% Baltic Porter and the flavor was so prominent as to make it difficult for me to finish.
