It was a 2.25 gallon batch where I used a half ounce split up between 60, 30, and 10 minutes, then another half ounce for a 4 day dry hop. 
This was also over a year ago, when I finally started coming around to hops and slightly more bitter beers. My tasting skills weren't too fantastic at the time.

I probably put too much importance on it honestly. I've had numerous beers that had high FG's and weren't cloying, but I've also had low FG beers that were. My hopslam clone wasn't cloying, but it was really close and FG was 1.008.

I just err really heavily on the side of making the beer dryer rather than sweeter. I've poured many a sweet beer down the drain, it's been rare that I've poured a beer out because it was "too dry".

I'll circle around again to a house beer of mine as a huge piece of evidence as to why I think c-malts get too much hate.

My Thundersmoke Brown uses 2.5 pounds of C malts - aka 21.8% of the grain bill - in a 1.057 OG beer.  Is there caramel flavor?  Of course.  Is it cloying?  Not at all - the beer is actually fairly dry, and immanently drinkable.  The last two times I have brewed it, I've hit 1.008 and 1.009 FG, which surely reduces the sweetness.

Then again, when I brewed my stout this last time, I used nearly two pounds of c-malts - AND reduced a gallon plus of the first runnings to syrup - AND had a FG of 1.020.  I don't perceive it as cloying at all.  Pleasantly roasty, nice caramel, but not oversweet.

I've never tried brewing with 20% crystal, but I may need to do a one gallon of that thunder smoke to try it out. I like some sweetness, and crystal malt, but have a hard time thinking 20% isn't cloying. But hey, that's just assumptions

I've brewed the thindersmoke brown and it was quite tasty. It was sweet, but definitely not cloying.

Yeast choice will impact it, of course.  WLP037 attenuates like a beast. Of course, some (Marshall) don't care for the flavor...

Until I taste it, I can only imagine that Thundersmoke as a beer I would hate. Smoke malt + way too dang much crystal? no thanks.

I tell you what, Dan.  The next time I brew it, I'll ship a couple of bottles to you.  If I can avoid shipping gremlins ruining things, I think it will change your mind.

The smoke is very reserved - if you didn't know it had smoked malt, you might not be able to place the flavor.  And the version I brew is not really sweet.

That's actually one of the reasons I think I wouldn't like it. Monday Night has Drafty kilt that has just a tiny bit of smoked malt and in a blind tasting it just tasted metallic and awful.


So I don't like smoke when it is prominent and I don't like it when it is subtle.

I should so be putting together a starter tonight (boiled last night, in the fridge now). I need to do at least 2 batches this weekend.  Ill probably repitch onto the US-05 i have in the BB from what i racked to the keg last night, and then i have multiple vials of yeast in the fridge right now i could use.  I think i might try out the San Diego Super one, though if i have some EKG i should get that Burton Ale spun up and do something british.  

Ive still got 2 yeasts from TYB, too....Thats Abbey and Hessian Pils tho, and i dont feel like doing those beers right now (and dont have anything for them)

Just stuck a SDSY starter in the fridge, that stuff is great. If you're not paying attention it'll finish fermenting and floc out before you even notice.

Right now I'm souring an all wheat DME Berliner pitched with lacto I cultured off of yogurt. Down to pH 3.3 after 12 hours and it's the cleanest smelling sour mash/kettle sour I've ever done. I'll be featuring it during my talk at NHC.

Damn, i should really get that shit on the plate tonight.  Im procrastinating because i could do it tomorrow night and be just fine to brew this weekend still...
