You can do that in my local Albertsons (and pretty much every grocery store in San Diego), but the prices per bottle tend to be more expensive. Good I guess if you value diversity over cost.

My Publix had make your own sixers, but most of the stock is excluded. I grabbed this out of the cold beer case, but somebody was trying to be cute and stick an IPA into their Boston Lager, I guess.

There's a chain of awesome beer shops in ATL and one in Birmingham called Hop City and everything they have is available as a single/mix-a-six. Except the refrigerated stuff, but that's rarely an issue.
Total Wine usually has a good singles selection.
Both of those places the singles are more per bottle than in a sixer, but that's fine with me.

My local store is promoing the pick six...by putting it on the end cap of the aisle. Not refrigerated.
Another store has sculpin. Unrefrigerated.

Do they still have the Deconstructed Latitude 48? It has 2 beers each of regular, EKG, Mosaic, Hallertau Mittelfrueh, Simcoe, and Zeus. I have yet to have or make a single hopped beer with any of these varieties. I bought this 12 pack a year or 2 ago before I really got too much into brewing. Unfortunately didn't drink the beers from a tasting perspective...
