Okay, so riddle me this.

Since I'm dry hopping, would it be better to do may fiveish days of lagering, allow to warm back up, dry hop, cold crash+gelatin?

Or should I go ahead and dry hop while at ~65F, then do a cold crash+gelatin and lager for a few days?

I don't like cold crashing in a carboy, but I do it. the suckback thing, even with an airlock concerns me. So I would rather only do that once.

Dry hop during diacetyl rest then crash and fine.

This advice is lining up with what I was thinking.  Figure I'll do the gelatin as I crash down, then lager a few days.

Two days of dry hopping done.  Tomorrow night before bed, I'll set the controller down low.  Toss the gelatin in the following morning before I go to work, lager for the rest of the week, bottle this weekend.

Sound like a plan?

Seems about right. Gelatin for 36-48 hours before packaging.

If past experience hold true, I'll be around optimal gelatin temperatures (40ish F) by morning (down from 65 F when I turn things down the night before).  I was figuring that I'd just let it lager at 33 F for the rest of the week, so the gelatin would actually be in there ~5 days.

Shouldn't hurt anything that I can think of.

Tried one of these tonight, only 7 days in the bottle.  I mean, sure, it's probably going to be flat, but I should have some idea of how it's going...

Yeah, I should not have.

Small hiss on opening, but still SUPER flat, even when pouring from high up.  Too sweet (hoping this is from the undigested priming sugar and lack of carbonation).  Aroma not near what I was hoping for (again, come on, flatness!).  Not quite the clarity I was hoping for, either.

Bleh.  I'll wait a week and try again.

What was the FG before adding carb sugar?

Okay.  Had one tonight, after two weeks in the bottle.

I don't want to give my full impression, as Greg and Rob are both going to try this one, and I don't want to influence their takes.

I will say that I was unhappy with the clarity.  I'm assuming that my fridge issues were key to this.  Ah, well.  It seems to be doing better with the Festbier - hopefully, I'll manage it.

I had crazy head retention.  As in, my little girl got sick, and I left a third of this beer on the desk for fifteen minutes; I still had a nice cap of foam.

Setting aside the amber color, I'd say this beer was closest to a pale ale, with a little more malt presence.  The heavy noble hops gave a pretty unique flavor.  not as much aroma as I was hoping for, but noble hops are pretty reserved.

That's all I want to say until the other guys have tried it.  If my baby is ugly, I want them to say so with a clear conscience.  ;)
