I have always, ALWAYS been a blueberry pancake guy. Oh, I've tried chocolate chip, banana, cherry, strawberry, and of course, good old plain with maple syrup. I like pancakes of many types, but nothing touches blueberry in my book.

Blueberry is where it's at. Blueberries in the actual batter, blueberries and blueberry syrup on top - plus a little whipped cream. This, my friends, is what pancakes are meant to be.

Well, a couple of months ago, my wife and I went to IHOP. I got blueberry, as usual (IHOP makes decent - not amazing - blueberry pancakes), and my wife got her typical plain. She'll put butter on them, but no syrup, no nothing.

Well, that day, they had some butterscotch syrup. She loves butterscotch, and she tried it - and liked them. Since then,she's mentioned butterscotch syrup a time or two when I do pancakes for Sunday breakfast.

Today was her birthday, so I did a big breakfast. I couldn't find butterscotch syrup in a store, but I looked up recipes online for making butterscotch sauce, and discovered that it was simple. Brown sugar, butter, milk, vanilla. She was a little dubious, but I went for it...

I also tossed butterscotch chips in my batter. I also moved to a smaller skillet, using solid shortening...

Oh. My. Goodness. Golden brown, and simply amazing. And the sauce...

I feel bad about it, but I may have a new favorite pancake. Sorry, blueberries. This stuff is just divine.

Pancakes are just the best. We went to a diner this weekend - the breakfast all day/greasy spoon kind - and got the breakfast platter. Their blueberry pancakes were amazing! Thick and fluffy without being undercooked in the center.

I love pancakes.

Those are the best kinds of diners. And blueberry pancakes are great any time of day.

The only chain like this worth going to doesn't serve pancakes, they serve waffles.

I'm not sure you can call that breakfast... it's just a flat cake at that point.

Waffles are pretty great, too.

But these butterscotch pancakes I made yesterday... these are the sorts of things that will spur marriage proposals.

I'll agree with you on that. On our honeymoon down south, I got to try that chain for the first time. I was surprised at how good it actually was, because I was expecting it to taste like the pancake chain.

Lucky for me though, this weekend wasn't one of those chains. The only thing missing from this restaurant was the actual dining car look.
