I know there were a handful of folks (testingapril especially) that was interested in how my wheatwine shaped up. Figured I'd start a thread to let everyone know how it's going.

The recipe:
El Trigo Fuerte

Mash schedule

Brewing notes:
Made 3L starter, saved 0.5L for next time, pitched 2.5L (decanted).

Brewed 2015/12/06, numbers are pretty much spot on except my OG was 1.096 instead of 1.094. 90 seconds of pure O2 + 30 seconds of pure O2 ~8 hours later.

Pitched @ 62ºF at ~4:00 PM (day 1).
Raised to 65ºF following morning (day 2).
Raised to 68ºF next morning (day 3).
Raised to 72ºF two days later (day 5) & held indefinitely.

Dextrose was added 2 days after pitching. 1 pint water + 1 lb dextrose.

Tasting notes:
2015/12/12 - 1 week after pitching. OG 1.018 (~80% AA), remarkably smooth for 1 week & 10%+ ABV. High end of warming, but not hot. Moderate notes of apricot, peach, white grape, and passionfruit and high levels of doughy wheat character. Pretty excited about how it's progressing, think it'll be in primo shape come NHC (maybe even AFC comp in Feb).

2016/02/24 - The beer got ~1 month in the cold chest at ~32ºF then another month at cellar temps since my last tasting. Earlier samples had a bit of a rough alcohol edge, but that is almost completely smoothed out at this point. Great creamy mouthfeel and a gentle alcohol warming. Good clarity, deep golden color. Flavor and aroma has turned straight pineapple, I could get away with calling people this is pineapple wine. Really pleased with how it's shaping up and I think it'll be 100% ready by NHC.

How's this batch coming? I'm intrigued by the idea of using Conan in a high gravity beer.

Speaking of which, BYO insists my subscription renewal starting in Oc 2015 includes Nov 2015 and Jan/Feb 2016, but not the Dec 2015 issue that includes the article on wheat wine. Go figure. I don't want to solicit a copyright violation, but it would be amazing if a beer fairy magically sent a scan of that article to my inbox. Just saying.

Good timing, I just took a sample as I pulled off a few bottles for America's Finest City competition. Didn't take any pictures, but I'll be pulling a few bottles off in a few weeks for NHC so I'll do another update then.

I'll update the original post with my latest impressions.

Im not sure i have that issue, Chino :( I only remember getting 2 copies, and the one i have here in my room is march/april i think.

Olan would probably know better...when did my sub start? :P

Thanks for the update. This is definitely going into my pipeline, though I think I'll use a bit more late hopping to bring it into "American Wheatwine" territory.
