I never go to bed before 12:30. Often never before 1 AM. Second job and all of that. Plus trying to run a website.

Yep, I take gravity exactly twice - once in the kettle, before I dump to the fermentor; once in the bottling bucket (or, I suppose now, the keg). Pre boil, post boil, x and y days into fermentaton... I ain't got time for that.

I forget to take gravity a lot of times when i package......not joking.

Its better now that im not shaking to carb....but even then, a guy can forget.

Even when bottling i forgot at times.


Fak, its 12:15 now. And i feel like shit as is. And work is hectic right now. Blah. Oh well. I should be feeling better by tomorrow or wednesday.

Olan, I think you're in the clear to just add the dry hops when the krausen falls back into the beer. There's usually a tiny bit of attenuation left at that point. When I want some yeast activity with my dry hops that's what I do.

I've never heard of this sugar addition with dry hops, although I do find it interesting given the discussion this weekend about the perils of oxygen and hops....hmmm. 

Also olan, I can totally relate to first experiences of wonderful smells emanating from your fermentation chamber. I brewed Ray's macc ipa this weekend (with a couple of minor hop additions to balance quantities and a different yeast [wlp007...I love that shit. It's definitely become my go to yeast]). Anyway...checked on fermentation last night and my god did it smell beautiful in there.

Yeah, the idea is that the fermenting yeast scavenge any introduced O2. It could just be placebo, too.
