In the last month or so I read a brief mention that isomerized alpha acids can chemically convert into some other, non-bitter substance with extended boiling. I don't remember the source anymore.

Does anyone here have any insight on this?

No source on hand at the moment, sorry. But yes, prolonged boiling (90++ minutes) reduces bitterness due to deterioration of iso-alpha's (beta's???). Bitterness peak/plateau is @ 60-90 minutes.
