DirectionsMash at 148 to keep the body light and have it finish dry. The flaked barley does wonders for head retention, but you can drop it and mash higher. I've also made this with a pound of white wheat subbed in for a pound of flaked maize. Use acid malt to hit pH as well.

Water adjustments: shoot for a malty-balanced SO4:Cl ratio. Mash pH: 5.3

WLP090 also works great in this beer, as well as a kolsch or German ale yeast.

Fermentation
notes
Ferment at 60 and slowly rise as fermentation finishes. A diacetyl rest won't hurt anything, I sometimes get diacetyl with this strain if fermented quick.

Tasting
notes
Very clean, lager-like. DMS is very evident if you don't do a 90 min boil, made this mistake once. A big hit for a party, or just good to have as a house beer.
