Fermentation
notes
Ferment at 68F for 3-4 days then ramp to 75F for diacetyl rest. Dry hop for 3 days and crash cool, keg, and enjoy as fresh as possible.

Tasting
notes
Session IPA that is heavy on the fruity notes from Amarillo and earthy and fruity notes from the Simcoe. Super dry and has the hop flavor of a huge IPA without being overly filling or bitter. Future modifications may be to not use Amarillo in the boil, and increase the Simcoe. Also considering Crystal hops for some spicy notes. Hop bill loosely based on the alleged hop bill for Bells Hopslam.
