Directions
Mashed for full mouth feel, at 156F.

I took 2 quarts (20%) of the first runnings and boiled it down to .75 quarts (just under 40% of the original volume).

Fermentation

Fermented cold; 52F for the first 6 days then raised to 60F and a little higher for the remainder of the 3 week fermentation period. 


Tasting
notes
Appearance: White head, dissipated after a minute, but left some around the edges. Color is a burnt orange, almost copper.

Aroma: Malty, with a hint of sweetness

Flavor: Like the aroma, it's malty with a hint of sweetness. No perceptual bitterness, but has enough to counteract the malty sweetness. Finishes with a slightly toasty note.

Mouthfeel: Feels pretty thin, especially given the high mash temp and high final gravity. Very smooth and drinkable, though.
