The only thing I would do differently is ferment with 34/70 (or its liquid equivalent) at 66F, as I prefer the attenuation I get from it compared to 810, and in my experience it's also slightly cleaner.

It...uh...reminds me of a recipe I might have dreamt up when I first started brewing. So, I can't really offer any critique because my best suggestion would be "make something else"

I'm kinda with Marshall on the yeast though. I would probably use a Kolsch yeast or 34/70 at ale temps.

Dammit. I was excited about doing an interpretation of a historical style.

Pfff. I still am.

Sigh. Marshall uses Kolsch yeast in EVERYTHING.

Better attenuation might be a good thing. Lemme go re-read the style again.

I love 029, not a big fan of 2565, but I haven't used it in a few months. I'll likely start using 34/70 slurry fermented around 66 a lot from now on, it's so clean, attenuates well, responds great to gelatin. So many great qualities.

The LHBS was out of 6 row.. well, he had some, but was old, and he was afraid it had weevils. So, I went with 2 row.

I also learned that my LHBS guy doesn't believe in Kentucky Common, or in historical beers. He feels that if Kentucky Common was a thing, it would have come around earlier.

Ah, well. He's fun to shoot the bull with, and this is the first time in nearly two years that I've had to substitute an ingredient.

What does that even mean!? Like, only styles that are currently in mass production are the only ones that are real? What did he think people made 1,000 years ago?

His position, I think, is that if Kentucky Common (and other historical beers - he specifically spoke of an "India Porter") were actual things, then they wouldn't have been so recently revived - they would have come up earlier. He spoke about some big beer historian who wrote a book in the 90s, but didn't talk about Kentucky Common.

I was like... but man, there are brewery logs, no?

And as for recent revivals... I mean, craft beer has not been a big thing for very long in the US. It makes sense to me that the huge growth would generate more interest in pre-Prohibition beers.

I mean, theres a pretty obvious hole in that logic that a lot of things have been 'forgotten' through history, and in the US its probably about more prevalent than anywhere, simply because of the meshing of so many cultures, and the incredibly rapid change in technology and agricultural/manufacturing/food production techniques.

You know, i was actually trying to be nice to the guy when i started that statement, but never really finished it.

We live in a pretty unique culture, and frankly in the rest of the world i'd sort of agree with him. German lagers, British ales, etc have all been tried and true for hundreds upon hundreds of years.

Kentucky common was what... 150 years ago max? This country saw such rapid changes that its sort of hard to keep track of it all, and to be perfectly blunt, prohibition fucked it up even more. (seriously, fuck the progressive movement. *cough*.

No, I agree with where you are coming from. I get what you are trying to say. Melting pot + rapid technology and process changes + frigging Prohibition equals loss of some things.

So i was talking to my mom earlier tonight a bit, and she mentioned i need to start labeling my beers in the keezer by darkness. (at this point, i put a post-it note on the lid with the name of the beer, which lately has been things like: "Vienna Kolsch," "Red IPA,", etc.

Well...she also asked about if i were to ever do a barrel aged beer, and i mentioned i'd need a LOT more kegs to start doing beers like that.

Her first reaction was of course a 'we dont have room for that kind of thing' response (which is kinda funny since its just us two at this point and at one point there were six of us in this house without the finished basement....

But anyways...i mentioned i need to buy a LOT more kegs, and she said...and i shit you not...that i need to get rid of some of the cases of bottles in the basement.

No. Really. Shes somewhat okay with me getting more kegs if i get rid of the bottles.

Holy fucking shit. What homebrewer doesnt *dream* of that?!?!

But yeah. I'll take 10 cases of empties to the fucking dump if it means getting more kegs...sheez.
