Question on the 7 ingredient rule. This probably sounds stupid, but is the rule to use exactly 7 ingredients, or 7 or less ingredients?

No stupid questions!

You MAY use up to seven ingredients. You MUST use five (the two base malts, the one specialty malt, the one hop, the yeast). If the percentages for these do it for you, you're good.

You do not have to get up to seven if that doesn't fit your vision.

Follow up question: I interpreted the hop requirements as needing at least 2 hop varieties. Is that incorrect? I pulled that interpretation from this part

"The rest of hop bill must be one or more hop..."

My interpretation was you had to use a named hop and at least one other hop.

Another side note: from talking to some lhbs' in my area, I think north down has been discontinued

Only one hop is required. If you meet the 25% requirement (in this case, Target or Northdown), you have the option of adding one or more hops - provided they are native to your beer's region (in this case, grown in the Commonwealth). However, you absolutely may just use the one hop variety, if you prefer.

Re: Northdown - Label Peelers, Midwest, Northern Brewer, Bells all have them in stock. Looks like they are showing up on lots of other results on a Google search as in stock, too...

Thanks Olan! Looks like I got some bad info from my lhbs. I'll have to order some in case I want to use them in v2 of my English ipa.

Happy to help. Maybe their supplier is out? Hops can be volatile, as I'm sure you know.

Is using Wyeast 1084 (Irish Ale) in the Commonwealth Oatmeal Stout acceptable?  I know Ireland isn't in the UK, but it was as recently as 1922!

I'm just full of questions. I bought some Perle hops from yakima today and there is zero indication of whether or not they are german or US perle. The acid content on the package matches that of german perle however, so I'm assuming they are indeed German. Does this match the spirit of the requirement for continental beers?

In the American Beers division, for the requirement of 20% base malt being one (and only one) of the following: U.S. 2-Row Pale Malt, U.S. Pilsner Malt, U.S. Pale Ale Malt, Wheat Malt, or Rye Malt...

Does Flaked Rye count, or must it be Rye Malt for it to be legal?
