So I'm planning to open ferment this roggenbier I'm brewing on Sunday so as to really dial up the banana esters to 11.

My plan is to ferment in the kettle itself, as I understand that you don't get near the effect by just removing an airlock.

However, fruit flies are an issue at my house, and this understandably worries me. I'm thinking of leaving the lid on the kettle until I have some krausen, then removing it until things slow down.

I've also considered rinsing out my brew bag, soakign it in star san, then putting it overt he top of the kettle. The mesh is pretty fine, perhaps fine enough to keep fruit flies out altogether.

Any thoughts on this?

You realize putting the lid on the kettle is the opposite of open fermentation? Just put some aluminum foil over the opening:

Well, my point was to not keep the lid on, just a little worried about contamination before my yeast takes over.

Thanks for the advice - precisely why I posted.

I'd use aluminum foil for almost any application if my wife would let me. It makes awesome wrapping paper too--you don't even need tape! Plus, it like a robot is giving you a present.

i was going to suggest cheese cloth, but it might be a bit too course.

Idk. I'd be nervous about using an existing mash bag because im paranoid like that. no reason it shouldnt be an issue, and assuming you dont have any abnormal holes in it, i cant see why a fruit fly would bother it.

Maybe cover your kettle with a grain bag/paint strainer bag (assuming it has a fine mesh). Should keep any fruit flies out.
