I very much appreciate the offer! But I'm brewing Saturday, and I'd like to have my starter ready by then. I'll probably just pick up some from the LHBS. Thank you, though!

I'd recommend pitch at 65F and set to 68F. 24 hours later set to 70F. After high krausen starts to fall set to 72F and leave it there a few days and while you're dry hopping.

I always fermented American ales at 64F with 007 when I was using it as my house yeast. D rest at 70.

I used 68-70 for British ales and was never happy with the ester profile, but I like my British ales kicking with esters.

I had another homebrewers British Golden Ale a few weeks ago and I think he said it was West Yorkshire yeast, and I guessed he had used mosaic hops, but it was all British hops. He thought it was a bit too fruity, I thought it was great.

Yeah, I could never get 007 to throw enough esters...except for one time I was trying to NOT get esters in an Irish Red and that one time it was very estery. I fermented at ambient (but reasonable temp) that time, so maybe temp fluctuations created more esters? I could never reproduce that ester profile in other beers.

I have really come around to thinking that temp fluctuations have more to do with beers not being "clean" than the actual specific temp does.


Hmmm... WLP041 (Pacific ale) looks interesting.

I thinkWLP041 is Red Hook, I haven't especiallyenjoyed anything I've sampled made with that strain.

Yeah, attenuation was a little low. I think I'm gonna go with 025 if they have it, 051if not, 007 as a safety net.

025 is a platinum strain, so no dice. 051 (California Ale V) is the winner.

That's the Anchor Liberty strain, probably the oldest craft IPA strain around
