Now that the 2015 NHC Seminar List has been published I feel better about announcing that I am going to speak at the 2015 National Homebrewers Conference. I am going to be giving a talk titled Berliner and Beyond: Sour Mashing and its Applications. To commemorate this auspicious moment I am hereby dedicating 2015 as Year of the Sour Mash.
Why sour mashing? Sour mashing is a fun, fast, and easy way to begin experimenting with sour beers, a topic more and more folks are getting interested in. I want to equip homebrewers of all skill levels to be able to successfully perform a sour mash and work it into a variety of their beers. A review of the conference seminars of past few years show that there have been no presentations dedicated to sour mashing and I want to be the one to change that.
Full details here:
In the mean time, feel free to hit me with any questions or ideas y'all have. I'm happy to Google answer any questions about sour mashing.

I'd like to see you grow sour starters off yogurt, probiotics, and other non traditional sources

Yeah, experimenting with different lacto sources is one of the things I'm most excited about. I think it might be one of the more novel things I'll get to present at the conference. I've seen some discussion on the Milk the Funk Facebook group, but as far as I know no one has published any kind of findings other than, "hey, check it out!"

I'm happy to contribute in any way I can. I give a lot of presentations in my work (and have taught a seminar at a Big 10 for a decade), and people have often said I have a way of making complex things easy for students to understand.
