DirectionsA hybrid between a Dark American Lager and a dunkel that I kind of threw together to compare w-34/70 to WLP833 (833 won, by the way). Very tasty, clean, and a bit more malty than most DALs, but with the adjuncts it has it doesn't quite fit into a Dunkel either.

I was in love with Victory malt then (still am, for that matter), but it's not quite to style. Same goes for the caraaroma, although that is much darker and works for color purposes. The Carafa II is dehusked, so use as much as you need to hit the color you want (I like to add it at vorlauf for minimal flavor contribution. I could see subbing in a pound or two of Vienna or Munich for some pilsner to add to the malt flavor.

Mash at 152.

I've found that 833 is slow to start, so I started it around 52. Rise to 55 after a week, and make sure to do a d-rest. It normally takes at least two weeks to finish up, but longer isn't surprising. Cold condition to smooth out, carbonate medium to medium high.

Malty and a very subtle bitterness that plays well with the color. Initially it was a little roasty but with some conditioning it faded. Very clear when fined. 833 attenuates like a beast, but you don't taste any alcohol. Very quaffable!
