Managed to catch something from my severe allergies to all of the pollen load the last few weeks. It has been a couple of years since it knocked me down this bad. Can't breathe or sleep, ache all over.
Have a big pitch of Czech Lager to make a BoPils... sitting in the chill chest. Just can't get it done. Maybe later this week.
Sorry for the rant.

I need to do a lager day and write like 7 blog posts. I've had an interesting project at work keeping me busy and it's almost done, so ... maybe I'll at least get the brew day in this weekend.

I haven't posted in almost a month. New job, new apartment, finals to finish up the year, it is all crazy.

Starting to feel like a human again. Clearly have something settled into my chest - I wheeze when breathing. My doctor just tells me to ride this out - probably not the best advice this time. I have always coughed "hard" - broken ribs in the past from it... worse this time around, but no sinus infection. Can't let this turn into chronic respiratory problems, already have lung scar tissue from a fire fighting event 20 years ago.
Hope to brew that BoPils this weekend. Gotta wake up the yeasties... so I should go make up a little re-starter.

Dang... Sounds rough, man.
Oh I've been out of brewing for way too long now. Hoping to do another one this weekend and get rolling again. I haven't been on Reddit or on Here, haven't brewed anything... nothing. I've got to get back into it.
Matt, what are you using for your Czech pils this time? I think I may try the Danish lager yeast.
This weekend will be Watermelon Wheat if I brew. Or maybe a Maibock.

This time, I'm using Bohemian Lager yeast. it was my favorite yeast again five others, so that's more than enough for me. I'm totally willing to split off some wort to try a new yeast, but I'm running out of options unless I branch into White Labs, in which case I would probably try out 830.
Also going to be swapping out my FWH Saaz to a 60 minute Magnum addition. Also considering using melanoidin instead of a decoction, but the romantic in me can't pull away from it.

Matt - I had a discussion with a guy over at the AHA forum... take it for what's its worth, heresay. S. Cerevisia has a lot of knowledge in the history of yeasts, and he has not led me astray just yet. But - you know - it's the internet.
The Bohemian Lager yeast is actually from German descent... where as the Czech Lager yeast has more direct lineage to Pilsen and more specifically Urquel. Interestingly it sparked a lot of heated debate over the amount of sulfur appropriate in BoPils. All that said - both are very clean yeasts, but the Czech throws a bit more sulfur. It was recommended to pitch low (50 F), let it free rise during lag to between (52F - 54F) for a week and finish at 58F to FG. Taste to determine a D-rest (2-3 days in the 60's) before a crash and lager for several weeks.
A lot of folks posted they don't like the yeast and claim to win numerous medals with the Bohemian Lager yeast...
Urquel was also traditionally decocted - not going to that extreme.

they cancelled day 1 of the MS 150 that was supposed to be tomorrow.. and La Grange (where we were supposed to stay the night) is supposedly under water..

Going out tonite to see what is what... I saw that they canceled that event. It still looks like more thunderstorms over the next few days.
Rained hard here, my yard is a mess and the spring up hill from us is running. I am just west of Bastrop - on the middle of a shallow hill. Got a mow in before the rain hits, but it was still sloppy - looks like a truck pull in my yard.
Looks like the worst was just east of Bastrop - more worried about erosion in the old pine forests...
