Late to responding to this, but here goes...
Fermentation temps are something I worry about, and right now there isn't a lot I can do other than the blankets and ice packs. I'm hoping over the next few months, likely after moving in to our new place where I have a garage, I'll get a chest freezer to convert in to a fermentation chamber. I check my temps at least twice a day when something is in the carboy. As they say in the Ronco commercials, "set it and forget it." That's what I'd like to do. That on top of water chemistry are the two biggest changes I'd like to make to my beer.

It's labor intensive, but if you take a big bucket or Rubbermaid tote, fill it with water, place the carboy inside, then swap out 2 liter soda bottles (that you fill with water and freeze ahead of time), you can keep your fermentation temperatures under control and reasonably consistent.

A few people wrap an old tshirt or towel around the carboy/bucket in the water bath. The wicking and evaporation further helps in cooling... I used to also run a fan to ensure airflow for a few more degrees.
