I've always wanted to brew a wheat wine only because I have never tried one and they sound interesting.  Especially with brett.  Let's be honest, any Barley/Wheat/Rye-wine sounds great with Brett.

Wheatwine in planning: OG 1,106 25% Golden Promise (TF), 46,5% Pale Wheat (The Swaen), 28,5% Dark Wheat (Steinbach), 50 IBU Saaz, WLP648 Trois Vrais, but first a small bitter Blonde to get more yeast.
