DirectionsSingle step mash, fly sparge at 185F.  Boil 90 min.  

Chill to pitching temp (70F) and age with wood for 1 year.  

Fermentation
notes
Fermentation was in cellar, highest was 68, lowest was 54.  Pedio became sick over winter, cleared up in summer.  

Tasting
notes
Amazing in your face wild beer.  Quite sour.  Balsalmic notes, roast, some dank fruit. I've been told its similar to Tart of Darkness, however more complex.
