It was my second visit @ Rodenbach, the first time was many years ago. The brewery itself is very modern, the old one is still there, unused. The old brewery is very seldom open to public, it is a beauty, all art deco / jugendstil.
Interesting was that they used to have their own malt house and kilned the malt @ 104°C, that fits with Munich and Aromatic malt. The melanoidins in these malts are anti oxidants, that is useful during their fermentation and maturation process. My bet would be on a lighter Aromatic malt but all I could get out of one of the brewers was a faint smile.
They acidify the wort at the end of cooking, I saw it happen but they wouldn't tell me to what pH. When the pH is above ~4.5 Lacotobacillus makes enzymes that work on proteins and thus reduce head, maybe the reason?
The coopers treat the knots in the wood with molten sulphur to make them water tight. Sadly their Dutch accent is so far away from mine that communication was near impossible.
The best was being all alone in one of the halls with the biggest foeders (vats) just sitting there for 15 minutes in complete silence.
