These challenger hops smell nasty. Like dirt and cheddar cheese.

I'm going to move this addition around. Maybe I'll use he north down I bought.

Yep. Northdown subbing in for challenger. They are a year older but they still smell good.

Also, a yellow jacket just dive bombed my batch sparge. I think I'll have to name the batch in his honor.

Oh, so insects are totally fine, but using hops as an additional fuel source ins't allowed to count towards usage %?

If I hadn't had those northdown, I was going to wait until my sparge was almost completely empty and throw the few pellets in to get absolutely minimal extraction and contact time.

Alternately, dry hop for 30 seconds.

Mild is brewed and ready for pitching once my wyeast pack wakes up. I guess my ESB will be a blend of mild and Kolsch? Shoot, maybe I'll just submit the mild as the ESB. It's not hoppy enough, but neither would the Kolsch/mild blend. Hmm...maybe I'll brew an ESB tomorrow while I watch football.

Realized I totally goofed on my Kolsch. I was supposed to split half the wort off before adding hops and sour it for a sour saison. I forgot to do that, and added my hops to the whole ten gals. This means I used about half the hops I needed to. So I just boiled some wort with a pile of the same hops and added it to the fermenter. Hoping that gets me my extra 10 IBU I need.

Low hopping half got a Brett pitch so it will just be a Brett blond.

Well, good luck! My Pale is heading to the box today for shipping tomorrow. The ESB will go out on Tuesday. The Scotch will travel next Monday.
