Hey folks,
I'm getting ready to brew a new tropical fruit bomb IPA this weekend. Does anyone have good suggestions for yeast?
Caveat: it needs to be a White Labs strain, as that's all my LHBS carries.
I'm a huge fan of Conan, but I had to retire my culture, and I haven't replaced it.
I don't care for WLP001, as I find it to be... boring.
WLP090 is on the short list for me.
I honestly would not mind a strain that throws some fruity esters, as I think that would play nicely with the crazy hopping I plan to do. I do want the FG to be reasonably low, however.

Got a batch going w/ WLP090 right now, love that strain. Everything from San Diego is best ;)

Now, that is an interesting one, Chino. I have never used Burton Ale. "Apple, clover honey, and pear" esters?
I'm using boatloads of Citra and Zythos hops (I may have purchased a LOT of these as judge gifts, you see), so I should get lots of tropical fruit. I think that some fruity esters would play nicely with that.

Want a crazy idea?
Witbier yeast.
WY3944 is super fruity and without the spices, I think it's basically all fruit and no phenol. At least that's all i got out of it the one time I used it.
I really want to try it in a NE IPA style.
Supposedly wlp400 is the same.

I'm cool with crazy ideas. I think that I may like WLP810 more than most people do.
Like I said, I can't really get Wyeast on a schedule for this weekend.
I really don't want phenols. Clove would be awful in an IPA, I think.
I'd like to know from someone who has used WLP400 before I go that route.

I haven't made anything with WLP400 yet, other than a starter a couple weeks ago. Found a vial that was from November of last year so I brought it back to life. I decanted and tried the unhopped wort, wasn't bad. Going to try an IPA with that this weekend so I can finally try it out. WLP007 was a good one for me, the one time I used it.

I'll second 007. Some esters and it'll finish pretty dry.
Brett C sounds like an experiment I need to try with an IPA.....I don't own that one yet, but, I'm working on it.
