Hey all,

I just bought 2oz each of random hops from Yakima Valley. I got: 


I plan on using Aramis for a saison -- it's listed as good for the style. I'm at a loss on what to do with the others, especially as I only have 2 oz each. Of note, I'm only brewing 2.5 gallon batches. I might even just make a few one gallon batches. 

Anyway, have any of you used these? Any ideas for usage? I was thinking of doing the same for each: something like all 2-row, a clean bittering hop at 60 minutes, and nothing but the random hop at flameout. I don't know if there's enough to really make a good dry hop addition. They are mostly crazy high AAUs.

For testing new (or even existing varieties of hops), I usually make a master batch of wort using Maris Otter at a pre-boil gravity of around 1.038.  I split it into 5.25 liter batches (so I usually get 4 or 5 batches from a single mash) and do a 40 minute boil.  I select a single hop and add quantities at 30 min, 15 min, 5 min, and whirlpool for 20 min to get an estimated 10 IBU from each addition.  I end up with a 1.050 gravity, about 40 IBU from the hops and heavily weighted towards the later additions to get some idea of flavor and aroma.  I ferment with WY1056 as a clean, well attenuated yeast.  Gives me about 8 bottles of each variety; I can test a number of varieties at once; and I am not overwhelmed with bottles of a SMASH beer which is rather uninteresting.

I was going to suggest doing a single hop pale ale, but I like what Oginme said. I'd go with something like that.

Nice, I may end up scaling that down a bit (3 gallons is about as high as I can go). Just curious, why Maris Otter? Personal preference, or does it interact with hops better than Pale 2-row would?

Personal preference, a bit more flavor than standard 2-row, makes the final brew a bit more interesting after the first couple of bottles.
