I'm planning to brew an IPA this week - maybe on New Year's Day - and I'd like some input on hop selections.

Thanks to the BU Challenge, I ended up with some extra hops on hand, even after giving them to judges and as prizes. Namely, I have a decent amount each of Amarillo, Galaxy, and Mosaic.

I love fruity IPAs, so it seems like I ought to be pretty happy no matter what I do. I do still prefer my IPAs to be on the lower end for bitterness; maybe no more than ~50 IBU? I'm thinking of a small FWH charge of one of these (since it's what I have on hand, and Mosaic and Galaxy both have good bittering levels), then some amount of one, two, or all of them in very late additions (say, ten minutes and flameout), followed by a huge dry hop.

Okay. So, given that I probably can't screw this up too badly, do you have any input as to a good way to combine these (or why I shouldn't)?

Definitely use pils malt and flaked wheat for most of the grist. Maybe a touch of munich and c60?

My last batch was Citra/Mosaic/Nelson Sauvin/Cascade/Falconers Flight at 2 minutes, plus some NS and Mosaic at 10 (all of those were 1oz additions). I used summit to bitter for some reason. didnt get any garlic, though.

Too much fruit covering any other flavor up to get garlic out of it i bet lol

Its good, but holy shit...fruity. My next one will be more citrus.

Citra and Nelson will make it fruity, no doubt.

I'm thinking of going with roughly even additions of each (Mosaic/Galaxy/Amarillo), but I wonder if I'm wasting good hops by having too much going on?

Fine.

Amarillo needs to go flameout and later only. Whatever amount you have to use, just throw half in at flameout and half in the dry hop.

Galaxy is magic. Add it all late and dry. Just use lots. Mmmm. Delicious.

Mosaic is not my jam. Not bad, just not my thing. I think it's the thing responsible for overpowering mike's beer with fruit. That's kind of been my impression of it. blueberries out the ears. I would just do a little dry hop with it. Ray seems to like it in the dry hop.

So, in summary, Galaxy @ 10, Galaxy @0, Galaxy @ dry...were there other hops you wanted to use?

kidding, I just love Galaxy.

Magnum for bittering ~ 20 IBU
Galaxy @ 10
Galaxy @ 0 (20m whirlpool
Amarillo @ 0 (20m whirlpool)
40/40/20 % split Amarillo, Galaxy & Mosaic @ Dry for 2 days.

Total hops should be 12-16oz

Grist:
45% pils or 2row
45% pale ale or maris
5% honey malt
5% vienna

It's winter, so 7.5-8.5% ABV.

150:50 sulphate to chloride.

Substitue some base for flaked oats and/or wheat malt if you want to go the NE IPA route.

Did you say blueberries? That sounds... AMAZING.

That hop schedule looks pretty similar to what I had in mind. Bigger total amount of hops than I was thinking... so I'll up it. Thanks for the input.

I'll probably commit blasphemy and use a small amount of Mosaic to bitter with, since I have it on hand (and no Magnum).

I was thinking about Golden Promise as the base... definitely putting in a little honey malt. And a half pound of C-60 (kidding!).

Very likely gonna go with Conan, if I have any viable yeast on hand.

For west coast grist I'd go:
* 80% 2 row
* 10% Munich or Vienna, your pick
* 4% Honey
* 6% dextrose

Conan was implied, lol.

Blueberries sounds like a hop flavor that would be amazing, but it just doesn't do it for me. Maybe I've never made/had a good enough mosaic beer.

Like Marshall says though, you could do a Galaxy and rabbit pellets beer and it would probably be amazing. Stellar hop. Pun intended.

Does it always have to be about this coast or that coast? I'm in the Southeast, what do I know about coasts?

I do like a little more to my IPAs that hopwater. Crazy, I know.

lol @ rabbit pellets. I had forgotten about that.
