Now that it's a couple of weeks in the keg, it's gone clear, and the flavor seems to have improved a bit (or I've gotten used to it). The aroma is a bit diminished, but is still huge.. and it way fruitier than it was to start with.
I'm beginning to believe that the answer to all IPAs is MOAR HOPS.

My lighter pale ale that i used all the whirlpool hops in is too bitter, but its not bad.
The huge IPA....man, there were a ton of hops in it, but maybe it could use more. Or maybe my taste buds are just off a bit.
Ive been mixing the two to make a 'normal' IPA and its been damn good.

Im still not much into sours. The New Glairus fruity ones are pretty good, but i almost compare them more to a wine than a beer.

You know whats funny about kegging is i dont know that im drinking *that* much more beer.
I am however *buying* waaaaaaaay less. Ive actually stopped at the store a couple times and looked at buying something, but thought "when the fuck would i drink that? I have 15+ gallons of beer at home right now.....cold and ready to drink"

I rarely even buy commercial beer for home consumption these days. I mostly only buy nice aging bottles and immediately stash them away.

But man, it was rough going after NHC last year: my pipeline was completely drained and I'm only just now recovering. Last year I purchased more commercial beer than I can even remember and it was still only like three cases :P
