Chino, Greg is collecting data on that precise xBmt this week-- 34/70 fermented at 60F no pressure vs. 82F under pressure. But I'm still left wondering-- what ester production??? I've now fermented 2 lager strains at or above recommended ale temps and they had no more esters than the ones fermented cool.

I'm going to have two gallons of mostly Pilsner + ST holdings wort left over when I brew this weekend or Monday before we leave for spring break. I think I'm going to grab some W-34/70, dry sprinkle half a pack, and let it run uncontrolled in my 67F basement for the 11 days until I get back (basement has been unseasonably warm). If it's fruit salad, that's fine. I'll put it in a tub of water to give it some thermal mass. I was going to pitch some leftover T-58 but fuck it.
